Ingredients:
3 Peppers are Seeded and cut into wedges (I like to use a mixture of colours).
150 g Chorizo
8 Chicken thighs I use bone-in, with skin on
500 g Potatoes Cut into bite-sized pieces.
100 g Pitted olives Drained
2 Large red onions Peeled and cut into wedges
8 Cloves Garlic Whole, in their skins
400 g Tomatoes
2 teaspoons Garlic powder
2 teaspoons sweet smoked paprika
1 teaspoon Sea salt
1 teaspoon freshly ground black pepper
To serve
Wedges of lemon for squeezing over Optional
Chopped flat-leaf parsley Optional
Directions:
1. Prepare the oven and preheat to 400 degrees F or 200 degrees C.
2. Add the potatoes and chorizo into a casserole dish. Toss until well mixed.
3. Place the casserole dish inside the preheated oven and roast for about 15 minutes.
4. Remove from the oven, then add the rest of the ingredients. Toss everything again until everything is well combined.
5. Put them back inside the oven and roast for 35 minutes or until done.
6. Remove from the oven and let it rest for a few minutes at room temperature.
7. Serve and enjoy!
Notes:
Make sure to but chorizo chunks.
Make sure to use chicken thighs.
Feel free to squeeze a lemon instead of adding olives.
You can use your preferred type of paprika.
