Oh, my! I have never cooked Spanish Paella before, but I am so glad that I did because it is perfect! You have got to give this recipe a try, I’m telling you! Feel free to add more ingredients if you prefer. Have a blessed day, friends. Enjoy!
Ingredients:
3 Roma tomatoes, very finely diced (or 8 oz. tomato sauce)
4 boneless, skinless chicken thighs, cut into pieces*
1/4 c Extra virgin olive Oil (Spanish EVOO if you have it)
1 bell pepper, diced (I like to use ½ red and ½ green)
1 Onion, diced
¼ c white wine
4 cloves Garlic
1 tsp paprika, sweet or smoked
1 pinch saffron thread*
Bay leaf
Salt and pepper
¼ c flat-leaf Parsley chopped, divided
5 c Chicken Broth*
2 c Spanish Rice*
½ pound Jumbo Shrimp or prawns, about 12 – peeled, tail on
1/2-pound Mussels (about 10-12), cleaned properly (beards off)
1/2 c frozen peas
Lemons, for garnish
8 ounces calamari rings
Directions:
1. Place a skillet on the stove and turn the heat to medium.
2. Add olive oil and allow it to become hot.
3. Add the garlic, onion, and bell peppers. Sauté until aromatic and soft.
4. Add the saffron, bay leaf, tomato, paprika, salt, and pepper. Stir until well blended and simmer for about 5 minutes.
5. Pour in the white wine and stir until well blended. Simmer for another 10 minutes.
6. Add the chopped parsley, rice, and chicken. Stir until well mixed.
7. Pour in the broth all over the pan and shake the skillet to flatten everything out.
8. Allow the mixture to boil, then turn the heat down to medium-low. Cook for 15 minutes or until the rice is soft.
9. Arrange the mussels, calamari, and shrimp over the rice. Sprinkle peas over the shrimp.
10. Cook everything for another 5 minutes.
11. Remove from the heat, then cover the skillet. Let it sit at room temperature for at least 10 minutes.
12. Sprinkle freshly chopped parsley on top.
13. Serve with lemon slices. Enjoy!
