Taste the ocean with this delicious Seafood Paella! I highly recommend this to my friends and that includes you! Feel free to add more ingredients if you feel like it. Enjoy!
5 tbsp olive oil
1 large onion, finely chopped
2 cloves garlic, finely chopped
2 tomatoes, peeled, chopped
1/2 tsp sugar
salt, to taste
1 tsp sweet paprika (pimentón dulce)
a pinch of saffron threads
4 small cleaned squid, bodies cut into rings, tentacles left whole
2 c paella rice (bomba) or risotto rice (Arborio)
3 c fish or chicken stock, plus more if needed
1 c dry white wine
12 jumbo shrimp, peeled, deveined
16 mussels scrubbed, debearded
Step 1: Place a paella pan or a large skillet on the stove and turn the heat to medium.
Step 2: Add olive oil and allow it to become hot.
Step 3: Add in the onion and saute until translucent.
Step 4: Add in garlic and saute for a minute or until aromatic.
Step 5: Add in the tomatoes, paprika, saffron, sugar, and salt. Stir and cook for about 5 minutes until the tomatoes are thick.
Step 6: Add in the squid and stir until well combined.
Step 7: Add in the rice and stir until well coated with the sauce.
Step 8: In the meantime, place a saucepan on the stove and add the chicken stock and wine, then stir until well blended. Turn the heat to medium and allow the mixture to boil. Season with salt and pepper to taste.
Step 9: Spread the rice with a wooden spoon, then cover and cook for 25 minutes over medium-low heat. Make sure to move the pan from time to time for the rice to cook evenly.
Step 10: 15 minutes after, place the shrimp over the rice and cook for a few minutes or until both sides are opaque.
Step 11: Add more stock if the rice is too dry.
Step 12: Cover the pan with aluminium foil and turn off the heat. Allow the paella to sit for 5 to 10 minutes.
Step 13: In the meantime, place a pot with a cup of water on the stove. Add the mussels and steam until done. Discard any mussel that did not open.
Step 14: Remove the cover of the pan and spread the mussels and lemon wedges over the paella.
Step 15: Serve with olives and aioli sauce. Bon Appetit!
