Special Edition Peanut Butter Cookies

Prep Time: 20 mins | Cook Time: 10 mins | Additional Time: 30 mins | Total Time: 1 hr | Servings: 24 | Yield: 2 dozen cookies

These heavenly treats have been the highlight of my day! You need to give this one a try to taste it yourself. Enjoy!

Ingredients:

2 c all-purpose flour
2 tsp baking powder
½ tsp baking soda
½ c butter softened
½ c peanut butter
½ c brown sugar
½ c white sugar
2 Eggs
1 c quick-cooking oats
½ c shredded coconut
½ c chocolate chips

Directions:

Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.

Step 2: Line with parchment paper a large baking sheet.

Step 3: In a medium mixing bowl, add in the flour, baking soda, and baking powder. Whisk until well combined.

Step 4: In another mixing bowl, add in the peanut butter, butter, white sugar, and brown sugar. Beat with an electric mixer until well combined.

Step 5: Add in eggs gradually into the butter mixture and beat until every addition.

Step 6: Add in the oats and stir until well combined.

Step 7: Add in the coconut and chocolate chips into the butter mixture and stir until well combined.

Step 8: Use your hands to roll 1 tablespoon of dough and form small balls.

Step 9: Arrange the cookies on the prepared baking sheet. Make sure to leave about 2 inches of space between each cookie.

Step 10: Use a fork to press the cookie dough to flatten them out.

Step 11: Place the baking sheet inside the preheated oven and bake for 10 minutes or until brown.

Step 12: Remove from the oven and let it sit on a wire rack to cool at room temperature.

Step 13: Serve and enjoy!
