This is the best potato dish! These Spicy Melting Potatoes have tons of spicy kick. They are crispy outside and creamy inside. These amazingly flavorful potatoes are so addictive! If you love spicy food, I am certain that you’ll love these Spicy Melting Potatoes! These Spicy Melting Potatoes not only taste awesome, but they have superb texture! The best potatoes to use for this recipe are Yukon Gold potatoes or Russet potatoes.
2 tbsp olive oil or vegetable oil
8 tbsp salted butter, melted
3 lbs Yukon Gold Potatoes, peeled
1/2 to 1 c. chicken broth
1 tsp honey
2 cloves garlic, smashed
1/2 tsp cayenne pepper
salt and pepper
How to make Spicy Melting Potatoes
Step 1: After squaring off the ends of the potatoes, cut them into about 3/4-inch to 1-inch slices.
Step 2: Prepare the oven. Preheat it to 475 degrees.
Step 3: Heat the oil and half of the melted butter in a large cast-iron pan over medium-high heat.
Step 4: In the pan, place the slices of potato in a single layer and season with salt and pepper. Saute the potatoes for about 5 minutes until the bottoms are browned. Then, take the pan off the heat and flip the potatoes.
Step 5: In the remaining butter, mix the honey and cayenne. Then, pour this on top of the potatoes.
Step 6: Place in the preheated oven and bake the potatoes for about 15 minutes. Then, take the pan out of the oven and flip the potatoes. In the pan, pour enough chicken broth until about 3/4 way up the potatoes. Next, add the garlic. Place the pan back in the oven and resume baking for another 15 minutes.
Step 7: Over the potatoes, spoon the liquid. If desired, season with extra salt and pepper. Serve the Spicy Melting Potatoes right away. Enjoy!
For this recipe, you can swap chicken broth with beef broth.
