It will only take you about 35 minutes to prepare and cook these Spinach Egg Muffins! Enjoy these treats that are low in carbs and high in protein! The ingredients to this recipe are pretty basic. Ingredients:
8 large Eggs
salt and pepper, to taste
4 large basil leaves, finely diced
1/2 medium yellow onion, finely diced
1/4 c milk (any kind)
1 c spinach, finely diced
1/2 c sun-dried tomatoes, sliced
1/3 c feta cheese crumbles
Directions:
Prepare the oven and preheat it to 175 degrees C or 350 degrees F.
Apply cooking spray to a 12-cup muffin tin.
Finely chop the basil, sun-dried tomatoes, spinach, and onion.
Fill each muffin cup with the chopped herbs and veggies followed by 1 tsp of crumbled feta.
Add milk and eggs into a mixing bowl, then whisk until well incorporated. Fill each cup with the mixture. Sprinkle salt and pepper to season.
Place the muffins in the preheated oven and bake for about 22 minutes or until done. Remove from the oven.
Serve and enjoy!
Notes:
These Spinach Egg Muffins are high in protein and low and carbs!
Place any leftovers in an airtight container, then place them in the fridge. Reheat for a few minutes in the microwave before serving again.
