If you love spinach and chicken, this spinach-stuffed chicken breast is to die for! Juicy and tender chicken breasts filled with cream cheese, fresh spinach, and Parmesan cheese. Super easy to make and ready in a breeze. These spinach-stuffed chicken breasts are my family’s favorite! This delicious dish is a great way to get some potassium in, thanks to the fresh spinach. Also the perfect low-carb dinner.
My kids are super picky, and they are not much for vegetables. The first time I made this chicken and spinach dish, I was worried that I’ll get angry looks from kids. I was wrong! They devoured these Spinach Stuffed Chicken Breasts!
Ingredients
1 tbsp olive oil or avocado oil
4 chicken breasts
1 tsp paprika
¼ tsp garlic powder
1 tsp salt, divided
¼ tsp onion powder
¼ c. grated Parmesan
2 tbsp mayonnaise
4 oz. cream cheese, softened
1 tsp garlic, minced
½ tsp red pepper flakes
1 ½ c. chopped fresh spinach
How to make Spinach Stuffed Chicken Breasts
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: On a cutting board, place the chicken breasts and drizzle with oil.
Step 3: Into a small bowl, place the paprika, 1/2 teaspoon salt, garlic powder, and onion powder. Mix well until combined, then evenly sprinkle this on all sides of the chicken.
Step 4: Cut a pocket into the side of each chicken breast using a sharp knife. Set aside.
Step 5: Into a small mixing bowl, place the cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper, and the rest of the ½ teaspoon of salt. Mix well until blended.
Step 6: Into each chicken breast, evenly spoon the spinach mixture.
Step 7: In a 9 x 13-inch baking dish, lay the chicken breasts. Place in the preheated oven and bake for about 25 to 30 minutes, uncovered, or until the chicken is completely cooked.
