Starbucks Cranberry Bliss Bread

This bread is superb! Oh, man, the rich flavour of the cranberries will surely light up your day. Give it a try. Enjoy!

Ingredients:

Bread:

1 c flour
1/2 c whole wheat flour
1/4 tsp baking soda
1/4 tsp baking powder
1/2 tsp kosher salt
1/2 cup unsalted sweet cream butter softened
1 c sugar
2 large Eggs
1 tsp pure vanilla extract
1/2 c buttermilk
1/2 c dried cranberries + 1/2 cup chopped for decorating
1/2 c white chocolate chips + 1/2 cup for melt

Vanilla Icing:

2 c powdered sugar
1 tsp pure vanilla extract
2-4 tbsp milk

Toppings:

1/2 c dried cranberries chopped
1/2 c white chocolate chips (melted)

Directions:

How to Make the Cranberry Bliss Bread:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Apply cooking spray or brush with melted butter a 9-inch loaf pan.

Step 3: In a large mixing bowl, add in all the dry ingredients and sift.

Step 4: In the bowl of a standing mixer, add the butter and sugar. Beat until creamy.

Step 5: Add in eggs gradually and beat every addition until well combined.

Step 6: Add in the dry ingredients and buttermilk alternately into the wet ingredients. Mix until well blended.

Step 7: Add in the chocolate chips and dried cranberries. Stir until well combined.

Step 8: Transfer the batter into the prepared loaf pan and spread it evenly.

Step 9: Place it inside the preheated oven and bake for about 1 hour or until done.

Step 10: Remove from the oven allow it to cool at room temperature, and then transfer to a wire rack.

How to Make the Vanilla Icing:

Step 1: Add the milk, powdered sugar, and vanilla in a medium bowl. Whisk until well mixed.

Step 2: Spread the icing over the cooled cranberry bliss bread and let it for about 30 minutes or until dry.

Step 3: Sprinkle ½cup of the chopped cranberries on the bread and drizzle white chocolate as well.

Step 4: Let the toppings set for about 5 minutes.

Step 5: Slice and serve. Enjoy!
