This Stuffed Pepper Soup is another easy slow cooker recipe that you should not miss. It’s simple to put together and almost a hands-free recipe. During the winter, soup is our go-to to warm us up inside and out. I can list all my favorite soup recipes, but this slow-cooker stuffed pepper soup is the one that stands out. It’s packed with amazing flavors. Among the simple ingredients that require to make this hearty soup. Plus, the deep, beautiful red color of this soup is super enticing. This soup will surely fill you up, warm your heart, and of course, your stomach! Not to mention, this easy recipe will not break the bank!
INGREDIENTS
1 (14.5 ounces) can of diced tomatoes with garlic and onions
1 lb. lean ground beef
3 c. beef broth
1 green bell pepper, seeds removed, chopped
1 c. cooked rice
1 yellow onion, finely chopped
1 red bell pepper, seeds removed, chopped
1 (15-ounce) can of tomato sauce
1 bay leaf
kosher salt and freshly ground pepper, to taste
1/2 tsp dried oregano
1/2 tsp dried basil
How to make Stuffed Pepper Soup
Step 1: In a large pan or skillet, cook the beef over medium-high heat until browned. Drain the grease, reserving about 2 tbsp fat.
Step 2: To the heat, return the skillet. Add the onions and saute until tender and translucent. To taste, season with salt and pepper.
Step 3: In a slow cooker, place the beef and onions. Add the tomato sauce, along with the diced tomatoes, beef broth, rice, and bell peppers.
Step 4: Add the oregano, basil, then bay leaf.
Step 5: Put the lid on and set it to cook for 3 hours on high or 6 to 8 hours on low.
Step 6: If needed, adjust the seasoning to taste.
Step 7: Into serving bowls, ladle the soup and serve right away. Enjoy!
