Pork tenderloin stuffed with mushrooms and bacon, anyone? Yes, please!
I am so excited to share this recipe with you today! I am 100 per cent sure that you are going to love it! In just 45 minutes, you can have the best dish to serve for lunch or dinner. Enjoy!
Ingredients:
1 garlic clove, minced
6 ounces brown mushrooms, thinly sliced
1 1/2-pound pork tenderloin, silver skin removed
2 slices bacon, chopped
1/2 teaspoon black pepper, divided
1 1/2 teaspoons sea salt, divided
1/4 c fresh parsley, chopped, plus more to garnish
1/3 c onion, chopped, (from 1/2 small onion)
4 tablespoons olive oil, divided
Directions:
For the Stuffing:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Place a large oven-proof skillet on the stove and turn the heat to medium.
3. Add 2 tablespoons of oil and allow it to become hot.
4. Add the chopped bacon, then cook for about 3 minutes or until crispy.
5. Add the onions and mushrooms, then saute for about 5 minutes or until translucent and soft.
6. Add minced garlic, 1/4 tsp black pepper, 1/2 tsp salt, and chopped parsley. Cook for about a minute or until aromatic. Move everything onto a clean plate.
To Stuff the Pork Tenderloin:
1. Remove and discard the silver thing that coats the meat.
2. Slice through the middle of the pork to turn it into like a book.
3. Wrap each chicken with plastic, then use a meat mallet to gently pound each to about 1/2-inch thick pieces.
4. Add the mushroom mixture over each tenderloin and spread it evenly. Roll and lock with about 6 toothpicks.
5. Sprinkle 1/4 tsp pepper and 1/2 tsp of salt all over the meat.
6. Turn the heat to medium. Add 2 tablespoons of oil into the same skillet and allow it to become hot.
7. Add the pork tenderloin, then cook sear side for about 2 minutes or until brown.
8. Move the skillet inside the preheated oven and bake the pork tenderloin for about 18 to 20 minutes or until done.
9. Remove from the oven and place the pork tenderloin onto a chopping board. Brush with the drippings from the skillet.
10. Allow the pork tenderloin to rest for at least 10 minutes at room temperature.
11. Slice into even round pieces.
12. Serve and enjoy!
