This was by far the best recipe I have ever tried in a very long time! This Stuffed Pork Tenderloin will surely make your day extra special! Oh, man, you are so in for a treat! Serve this as is or over rice, and you have yourself a meal to remember. Enjoy!
Ingredients:
1 1/2 pounds pork tenderloin silver skin removed
2 slices bacon chopped
6 ounces brown mushrooms thinly sliced
4 tablespoons olive oil divided
1/4 c fresh parsley chopped, plus more to garnish
1 garlic clove minced
1/3 c onion, chopped (from 1/2 small onion)
1/2 teaspoon black pepper divided
1 1/2 teaspoons sea salt divided
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Place an oven-safe skillet on the stove and turn the heat to medium.
3. Add the bacon, then cook until brown and greasy.
4. Add the onion and mushrooms. Saute until translucent.
5. Add the garlic and parsley, then saute until aromatic.
6. Sprinkle salt and pepper to taste. Remove from the skillet onto a clean plate.
7. Use a sharp knife to create a pocket in the middle of each pork tenderloin. Use a meat mallet to gently pound each pork.
8. Smother each pork with the mushroom mixture, then roll from end to end. Use toothpicks to seal.
9. Rub salt and pepper all over each stuffed pork.
10. In the same skillet, add 2 tbsp of oil and turn the heat to medium. Allow it to become hot.
11. Add the stuffed pork and sear per side for 2 minutes or until they turn brown.
12. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
13. Move the skillet with the stuffed pork inside the preheated oven and bake for about 20 minutes or until done.
14. Remove from the oven onto a flat surface. Let it sit for about 10 minutes.
15. Slice into even pieces.
16. Serve and enjoy!
