Sun-Dried Tomato Pasta with Chicken and Creamy Mozzarella Sauce

The best pasta dish you will ever have today! Give this one a try and I am 100 per cent sure that you and your loved ones are going to love it. Enjoy!

Ingredients:

3 garlic cloves, minced
4 ounces sun-dried tomatoes
2 tbsp olive oil
1 pound chicken breast tenderloins, sliced
1/4 tsp salt
1/4 tsp paprika
1 c half and a half (or use 1/2 cup heavy cream + 1/2 cup milk)
1 c mozzarella cheese, shredded (does not use fresh Mozzarella, use pre-shredded Mozzarella)
8 ounces penne pasta (for gluten-free, use gluten-free brown rice pasta)
1 tbsp basil
1/4 tsp red pepper flakes
1/2 c reserved cooked pasta water or more
1/4 tsp salt to taste

Directions:

Step 1: Place a large skillet on the stove and turn the heat to medium.

Step 2: Add in the oil and allow it to become hot.

Step 3: Add in the sun-dried tomatoes and garlic. Saute for 1 minute or until aromatic.

Step 4: Remove the sun-dried tomatoes and leave the oil in the skillet.

Step 5: Add in the sliced chicken and cook for 1 minute over high heat.

Step 6: Remove the skillet from the heat.

Step 7: Cook the pasta referring to the directions provided on the package.

Step 8: Drain the pasta and set aside about 1 cup of the pasta water.

Step 9: Slice the sun-dried tomatoes into much smaller cuts and put them back in the skillet.

Step 10: Add half-and-half and Mozzarella cheese, and then stir until creamy. Allow the mixture to boil.

Step 11: Reduce the heat and simmer for a few minutes until done. Make sure to stir from time to time.

Step 12: Add in the cooked pasta and stir until well mixed.

Step 13: Add in ¼ teaspoon of red pepper flakes and 1 tablespoon of basil. Stir until well mixed.

Step 14: Add ½ cup of the reserved pasta water if the sauce becomes too thick.

Step 15: Sprinkle more red pepper flakes, salt, and pepper if necessary.

Step 16: Simmer for a few minutes, and then remove from the heat.

Step 17: Serve and enjoy!
