These chicken thighs are juicy and moist on the inside and perfectly caramelized on the outside. It’s the perfect mid-week dinner great to serve over mashed potatoes and alongside some greens.
Ingredients
1 tbsp Butter
1 tbsp Oil
6-7 Boneless Skinless Chicken Thighs
2 Garlic Cloves
2-3 sprigs of Fresh Rosemary
¼ c. Chicken Stock
Spice Rub:
1 tsp Garlic Powder
2 tbsp Light Brown Sugar
½ tsp Smoked Paprika
¼ tsp Black Pepper
½ tsp Onion Powder
½ tsp Salt
½ tsp Chili Powder
How to make Sweet & Spicy Boneless Chicken Thighs
Step 1: Combine the spice rub ingredients in a bowl.
Step 2: Using a kitchen towel, pat dry the chicken thighs. On both sides of the chicken, sprinkle the dry seasoning mix.
Step 3: Add the butter and oil to a heavy cast iron skillet. Once the butter has melted, add the garlic cloves. Fry for about 30 seconds until the garlic is lightly golden and loses the raw smell.
Step 4: Into the skillet, lay the chicken thighs, flat-side facing down. Sear for about 5 minutes over medium-high heat until crispy and golden. Flip the chicken and continue to sear the other side over medium-high heat for 2 minutes more.
Step 5: To the side of the pan, gradually pour in 1/4 c. stock. Then, add the rosemary sprig. To release any browned caramelized bits, scrape the bottom of the pan.
Step 6: Put the lid on and cook for additional 3 minutes on high heat. Then, remove the cover and allow the mixture to simmer for 2 minutes more or so until a thick sauce forms.
Step 7: Serve the Sweet & Spicy Boneless Chicken Thighs immediately with rice, beans, or veggies. Do not forget to drizzle the sauce on top. Enjoy!
Notes:
If you have any leftover spice mixture, keep them in an airtight container for later use.
Make sure not to overcrowd the pan or the chicken will not crisp up. Sear the chicken in 2 batches if using a small pan. Once all the chicken is seared, return them to the pan, then add the stock and rosemary.
You can swap chili powder with paprika and adjust it according to taste.
