Juicy, caramelized boneless chicken thighs clothed in a sweet and spicy sauce. Pair these delicious sweet and spicy boneless chicken thighs with beans, rice, or veggies for the perfect weeknight dinner that your family will surely love!
Ingredients
1 tbsp Oil
1 tbsp Butter
6-7 Boneless Skinless Chicken Thighs
2 Garlic Cloves
2-3 sprigs of Fresh Rosemary
¼ c. Chicken Stock
Spice Rub:
1 tsp Garlic Powder
2 tbsp Light Brown Sugar
½ tsp Smoked Paprika
¼ tsp Black Pepper
½ tsp Chili Powder
½ tsp Salt
½ tsp Onion Powder
How to make Sweet & Spicy Boneless Chicken Thighs
Step 1: Place the dry ingredients (from the spice rub ingredients) in a bowl. Mix well until combined.
Step 2: Using a kitchen towel, pat dry the chicken thighs. On all sides of the chicken thighs, sprinkle the dry seasoning mix.
Step 3: In a hot, heavy cast-iron skillet, add the butter and oil. Then, add the garlic cloves and fry for about 30 seconds, stirring until aromatic and lightly golden.
Step 4: Into the skillet, lay the chicken thighs, flat side-up, and cook for about 5 minutes over medium-high heat until crispy and golden. Flip the chicken thighs and continue to cook the other side for 2 minutes more.
Step 5: To the side of the pan, gradually pour in 1/4 c of stock. Then, add the rosemary sprig. To release any brown caramelized bits, scrap the bottom of the pan.
Step 6: Put the lid on and continue to cook for additional 2 minutes over high heat. Remove the cover and let everything simmer for 1 minute more until the sauce has thickened.
Step 7: Remove from the heat when done and serve the sweet and spicy boneless chicken thighs with beans, rice, or veggies. Do not forget to drizzle the sauce on top. Enjoy!
Notes:
In an airtight container, you can keep any leftover spice mixture.
When cooking the chicken, ensure not to overcrowd the pan. I cook the chicken in two batches and just place them all back into the pan before adding the stock and rosemary.
For this recipe, you can swap chili powder with paprika.
