Easy casserole loaded with ground beef, refried beans, salsa, cheese, and corn chips. This is a delicious family-friendly dinner that you can easily double or make in advance.
INGREDIENTS
TACO CASSEROLE:
15 ounces of refried beans
1 lb. ground beef
1 standard-size package of taco seasoning
1 c. mild salsa
2 c. Fritos Corn Chips lightly crushed
2 c. grated cheese, divided (Colby Jack, Monterey Jack, Cheddar, or Mexican Blend)
TOPPINGS:
1 c. sliced black olives
1 c. cut tomatoes
1 c. sour cream
1 c. shredded lettuce
1 c. Fritos chips – you can also use shredded cheese
How to make Taco Casserole
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Brown the ground beef. Once cooked through, add the taco seasoning following the package instructions.
Step 3: In the meantime, scatter the crushed Fritos in the bottom of an 8 x 8-inch baking dish.
Step 4: Then, cook the refried beans. Add the salsa and 1 c of the cheese. Cook until hot. You can either do this on the stovetop or in the microwave.
Step 5: Over the Fritos in the baking pan, spread the bean mixture, followed by the ground beef mixture. On top, sprinkle the rest of the 1 c cheese.
Step 6: Place in the preheated oven and bake for about 15 minutes until the cheese has melted.
Step 7: Take the casserole out of the oven when done and serve it right away with your favorite toppings. Enjoy!
NOTES:
Keep any leftovers in an airtight container in the fridge for up to 4 days.
If desired, you can easily double this recipe.
If making in advance, assemble the casserole. Bake in the oven when ready to serve. Note that the baking time will take a little longer. Alternatively, you can bake the casserole right away and simply reheat individual servings in the microwave. To ensure a nice crunch, top the casserole with some fresh corn chips.
