My kids are big fans of this tater Tot sausage breakfast casserole. This is super easy to throw together, and this can also be made in advance. This casserole is packed with everything you enjoy for breakfast and more! This is my family’s favorite breakfast to jump-start our day! But you can also serve this casserole as a filling lunch or dinner. If served for dinner, this casserole makes a delicious side dish.
Ingredients
8 eggs
2 pounds of hot breakfast sausage
1 (30-32 ounces) bag of frozen tater tots
1/4 teaspoon garlic powder
1/2 c. mozzarella cheese
1/4 teaspoon onion powder
1-1/2 c. shredded cheddar cheese
2 c. milk
1 teaspoon salt
1/2 teaspoon pepper
HOW TO MAKE TATER TOT SAUSAGE BREAKFAST CASSEROLE
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, lightly grease a 9 x 13-inch pan.
Step 2: Cook the sausage in a large skillet until browned. Then, drain the excess grease.
Step 3: Combine the tater tots, cooked sausage, and cheese in a large bowl. Then, pour this into the prepared pan.
Step 4: Mix the eggs, salt, pepper, garlic powder, onion powder, and milk until well combined. Over the tater Tot mixture, pour the mixture. If baking later, cover the casserole and store it in the fridge.
Step 5: Place in the preheated oven and bake for about 60 to 70 minutes, uncovered, until the eggs are set.
Notes:
You can assemble the casserole ahead of time and simply keep it in the fridge or freeze it for later.
You might need to add a couple of minutes to the baking time if cooking after refrigerating.
If frozen, thaw the casserole completely and bake as instructed in the recipe.
To reheat after freezing, thaw the casserole fully first. Then, tent using aluminum foil and bake for about 30 to 40 minutes at 350 degrees F until completely heated.
