Brining the pork chops is optional but is recommended if you want tender and juicy pork chops. Delicious chops simmered in a simple gravy with fresh onions and garlic. Throw this amazing dish in no more than an hour for a quick filling dinner and serve these luscious chops with the sauce over rice or noodles.
Ingredients
BASIC BRINE:
3 cups water
2 cups ice cubes
1/4 cup Kosher salt
1/4 cup sugar
PORK CHOPS:
6 bone-in pork chops
1 Egg, beaten with a little water to make an egg wash
Italian bread crumbs
vegetable or canola oil
1/2 large onion, sliced thin
2 clove garlic, minced
1 1/2 cups chicken broth
1/2 cup dry white wine
1/2 teaspoon dried parsley flakes
1/4 teaspoon dried basil
1/4 teaspoon freshly ground black pepper (or to taste)
How to make Tender and Juicy Pork Chops
Step 1: In a plastic bowl with a tight-fitting lid, add the brine ingredients. Mix, then add in the pork chops. Cover the bowl and place it in the fridge for at last 4 hours. This extra step will guarantee super tender pork chops.
Step 2: After 4 hours, take the pork chops out of the brine and pat them dry with paper towels. Coat the pork chops in egg wash and dredge in the Italian bread crumbs.
Step 3: In a large skillet, heat the oil (add enough to coat the bottom of the skillet). Add the pork chops to the hot oil and fry on each side for about 3 minutes until nicely golden brown. Set the cooked pork chops aside when done.
Step 4: Discard the excess oil from the skillet but leave about a tbsp, then add in the onions and saute for about 5 minutes over medium heat until translucent. Then, add in the minced garlic and continue to cook for a minute more, stirring. Pour in the chicken broth and the white wine before adding in the seasonings. Allow the mixture to simmer for about 5 minutes over low heat.
Step 5: Return the pork chops into the skillet and nestle in the sauce. Cover and cook further over low heat. This takes another 20 minutes.
Step 6: When done, remove from the heat and serve over noodles or rice. Enjoy!
