Ingredients:
FOR THE PORK LOIN
3- lbs pork loin
1 tbsp olive oil
FOR THE SPICE RUB
1 tsp sweet paprika
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried thyme
1/2 tsp dried rosemary
salt and fresh ground pepper, to taste
FOR THE HONEY GARLIC GLAZE
4 cloves garlic, minced
1/4 c honey
3 tbsp low-sodium gluten-free soy sauce
1 tbsp Dijon mustard
1 tbsp olive oil
FOR THE VEGETABLES
1 tbsp olive oil
1 lb brussels sprouts, cut in half
1 lb butternut squash, peeled, seeds cleaned out, and cut into 1-inch cubes (you can also buy pre-cut butternut squash)
Directions:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Line with aluminium foil a rimmed baking sheet.
3. Use paper towels to pat dry the pork loin.
4. Add garlic powder, paprika, thyme, onion powder, rosemary, salt, and pepper into a mixing bowl. Whisk until well mixed.
5. Apply cooking spray all over the pork loin.
6. Rub the pork loin with the spice mix.
7. Place a skillet on the stove and turn the heat to medium.
8. Add olive oil and allow it to become hot.
9. Add the pork loin and sear for 5 minutes on each side or until brown.
10. Remove from the skillet onto the prepared baking sheet.
11. In a separate mixing bowl, add the soy sauce, garlic, honey, oil, and mustard. Stir until well blended.
12. Add more soy sauce if the texture becomes too thick.
13. Set aside about 2 tbsp of the sauce for later use.
14. Brush the rest of the honey mixture on top of the pork loin.
15. Place it inside the preheated oven and roast for about 25 minutes.
16. Add the reserved sauce into a mixing bowl, then add the veggies. Toss until well combined.
17. Remove the loin from the oven and arrange the veggies all over the loin.
18. Cover everything with aluminium foil, then roast for another 30 minutes or until done.
19. Remove from the oven and allow to rest for at least 10 minutes at room temperature.
20. Slice the loin into small pieces.
21. Serve the pork loin with the veggies. Enjoy!
