I cannot think of a better way to start the day right. Whip this scrambled egg toast for a special breakfast that your family deserves. The tasty scrambled egg over crunchy, buttery toast is to die for!
INGREDIENTS
2 eggs
⅓ c. good quality feta cheese crumbles
½ tablespoon butter, plus more to butter the bread
chopped parsley or dill to garnish
2 slices bread (I use white, sourdough bread)
How to make The Best Scrambled Egg Toast
Step 1: On both sides of the bread, spread a thin layer of softened butter. Then, fry the bread for about 2 minutes per side over medium heat until the crust is golden.
Step 2: In the same frying pan where you cook the bread, melt half tbsp butter. Then, add the eggs and feta cheese. Cook for about 3 to 4 minutes, stirring often until the eggs are completely cooked.
Step 3: Between the slices of bread, divide the eggs and sprinkle with some freshly chopped dill or parsley.
Step 4: Serve the scrambled egg toast with a cup of your favorite coffee. Enjoy!
NOTES:
You are welcome to use your favorite kind of bread for this recipe like white, wheat, whole grain, rye, and pumpernickel. Or use croissants if you are feeling fancy.
A good feta cheese is sheep’s feta cheese sold in bricks and stored in brine.
Feel free to customize this egg toast. You can add a slice of mozzarella to the bread before the eggs. You can also add some chopped tomatoes or roasted avocados to the eggs. I love to place a slice of avocado on top.
