I am so glad that I finally decided to give this recipe a try because I never would have tasted perfection! It has creamy mashed potatoes, bacon, and cheese in it. How awesome is that?
½ lb bacon
8 medium russet potatoes, Equal to about 6 pounds
3 tbsp canola oil
2 sticks salted butter, softened and sliced into cubes.
1 c sour cream
1 c whole milk
1 c grated cheddar cheese, plus more for topping
2 tsp seasoned salt
3 green onions, sliced
Salt and pepper, to taste
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Lightly grease a 9×13-inch baking dish.
Step 3: Place the sour cream, butter, and milk at room temperature.
Step 4: Clean the potatoes and pat them dry. Rub canola oil on each potato and arrange them on a baking sheet.
Step 5: Place the baking sheet inside the preheated oven and bake for 40 minutes or until fork-tender.
Step 6: Meanwhile, place a large pan on the stove and turn the heat to low.
Step 7: Add in the bacon and cook until crispy. Place them on a plate lined with paper towels to drain any excess grease.
Step 8: Remove the cooked potatoes from the oven and set aside. Reduce the heat of the oven to about 350 degrees F.
Step 9: Discard the skin of the potatoes except two. Cut them into three and place them in a large bowl.
Step 10: Crumble the crispy bacon and set aside.
Step 11: Add the rest of the ingredients into the bowl with the potatoes including the sour cream, milk, grated cheese, butter, salt, and pepper. Smash the potatoes using a masher until well mixed.
Step 12: Transfer the mashed potato mixture into the prepared baking dish.
Step 13: Sprinkle the crumbled bacon and a generous amount of shredded cheese on top of the mixture.
Step 14: Place it inside the preheated oven and bake uncovered for 20 to 25 minutes or until done.
Step 15: Remove from the oven and sprinkle green onions on top.
Step 16: Serve and enjoy!
