This is a classic recipe that some of you already know! This is Tiramisu! Of all the Tiramisu’s I had; this one stands out for sure! Prepare for a day, this is surely worth all the time and effort. A must-try!
Ingredients:
1 pound mascarpone cheese at room temperature
½ cup espresso or strongly brewed coffee at room temperature
1 ¼ cup heavy cream
¼ cup rum
1 tablespoon sugar
6 Egg yolks pasteurized, room temperature
⅔ cup milk
1 tablespoon unsweetened cocoa for dusting
1 package of ladyfinger cookies like Savoiardi 7 ounces (about 28 ladyfingers total)
1 teaspoon vanilla extract
¾ cup white sugar
Directions:
1. Add 3/4 cup of sugar and egg yolks into a mixing bowl. Beat until well blended. Add milk and whisk until well blended as well.
2. Transfer the mixture into a saucepan.
3. Place the saucepan on the stove and turn the heat to medium, then stir and allow it to boil for about a minute or two. Remove the pan from the stove and allow the mixture to cool. Place it in the fridge to chill for at least an hour.
4. Add 1 tablespoon of sugar, vanilla, and cream into a mixing bowl. Beat until it forms stiff peaks.
5. In the yolk mixture, add mascarpone and whisk until well blended.
6. Add the whipped cream, then stir until well incorporated.
7. In a separate mixing bowl, add rum and coffee. Stir until well blended.
8. Dip each ladyfinger into the rum mixture, then put them into a 9×9-inch baking dish and arrange them in a single layer.
9. Spread 1/2 of the mascarpone cream filling on top of the ladyfingers. Repeat the process until everything is arranged in layers.
10. Cover it with plastic, then place it in the fridge to chill for 24 hours.
11. Garnish with cocoa powder.
12. Serve and enjoy!
Notes:
Make sure that the mascarpone and eggs are at room temperature before you start prepping.
Make sure not to overmix the cream mixture.
Do not soak the ladyfingers just dip them a bit.
