I love this Tomato Pie! This is surprisingly scrumptious and excellent for summer.
First, bite, and I was hooked! This tomato pie recipe is incredibly easy to throw together using simple ingredients. This pie is bursting with summer flavors. The basic pie crust is topped with fresh tomatoes, some green onions, and fresh basil. Then, cheddar cheese, mozzarella cheese, mayo, and bacon made up the second layer of this pie. This is so good you’ll want to make this over and over again!
INGREDIENTS
1 9-inch pre-baked deep dish pie shell – I used Pillsbury
4 large tomatoes, peeled and sliced
3 green onions, chopped
10 fresh basil leaves, chopped
1 c. grated sharp cheddar cheese 85 grams
1 c. mayonnaise 205 grams
1 c. grated mozzarella cheese 90 grams
8 slices cooked bacon – crumbled
Salt and pepper
HOW TO MAKE TOMATO PIE
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: In boiling water, place the tomatoes for 30 seconds. In a bowl of iced water, quickly transfer the tomatoes. This way the skin would be easier to peel. After peeling the tomatoes, slice them and place them in a colander in the sink. Sprinkle the tomato slices with salt and let them drain for 10 minutes.
Step 3: In the bottom of the prepared crust, place a single layer of tomato slices. To taste, sprinkle with salt. Then, top with half of the basil and onions. Do the same layers (the rest of the tomatoes, sprinkle with pepper, basil, and onions).
Step 4: Mix the cheese and mayonnaise. Then, spread this on top of the tomatoes and sprinkle with the crumbed bacon.
Step 5: Place in the preheated oven and bake for about 30 minutes or until lightly browned.
Step 6: Remove from the oven when done and allow the pie to cool a little. Then, slice and serve warm. You can keep the pie in for a couple of days in the fridge.
