Easy, quick, and loaded with fresh ingredients. This Tomato Spinach Chicken Spaghetti is a must-try! So good, your whole family will surely love this pasta dish!
Ingredients
½ pound chicken boneless and skinless (preferably, boneless, skinless thighs), chopped
¼ c. sun-dried tomatoes, chopped, drained of oil
2 tbsp olive oil, drained from sun-dried tomatoes
3 garlic cloves, chopped
¼ tsp red pepper flakes
¼ c. fresh basil leaves, chopped
4 Roma tomatoes, chopped
8 ounces of spinach – fresh
8 ounces of spaghetti pasta
3 tbsp olive oil (make sure to use high-quality olive oil or oil from the sun-dried tomatoes jar)
¼ tsp salt
How to make Tomato Spinach Chicken Spaghetti
Step 1: To a large skillet, place the chopped sun-dried tomatoes and 2 tablespoons of olive oil, drained from sun-dried tomatoes over medium-low heat.
Step 2: Then, add the chopped chicken (I prefer using boneless, skinless chicken thighs, but you are welcome to use chopped chicken breasts as well).
Step 3: Sprinkle the chicken with red pepper flakes. Cook the chicken for about 5 minutes over medium heat until completely cooked and no longer pink.
Step 4: To the skillet with the chicken, add the chopped tomatoes, chopped fresh basil leaves, fresh spinach, and chopped garlic. Continue to cook for another 3 to 5 minutes over medium heat until the spinach has slightly wilted and the tomatoes release some of their juices. When done, take the skillet off the heat.
Step 5: If needed, add more salt according to taste. Put the lid on and keep the skillet off the heat.
Step 6: Following the package directions, cook the pasta until al dente.
Step 7: Drain the pasta when done and add the cooked and drained pasta to the skillet with the chicken and veggies. Reheat everything over low heat, stirring well and adding extra salt and pepper if needed. Then, take off the heat.
Step 8: Add more high-quality olive oil (optional) once the pasta and veggies are off the heat. Or use the olive oil from the sun-dried tomato jar.
