This is a refreshing pasta loaded with tons of fresh ingredients (garlic, tomatoes, and spinach). It’s easy and quick to make and excellent for a light dinner.
Ingredients
3 garlic cloves, chopped
2 tbsp olive oil, drained from sun-dried tomatoes
½ pound chicken boneless and skinless (preferably, boneless, skinless thighs), chopped
¼ c. sun-dried tomatoes, chopped, drained of oil
4 Roma tomatoes, chopped
8 ounces of spinach fresh
8 ounces of spaghetti pasta
¼ c. fresh basil leaves, chopped
3 tbsp olive oil (use high-quality olive oil or oil from the sun-dried tomatoes jar)
¼ tsp salt
¼ tsp red pepper flakes
How to make Tomato Spinach Chicken Spaghetti
Step 1: To a large skillet over medium-low heat, add the chopped sun-dried tomatoes and 2 tbsp of olive oil, drained from sun-dried tomatoes.
Step 2: Then, add the chopped chicken and sprinkle the red pepper flakes and salt all over. Cook for about 5 minutes over medium heat until the chicken is completely cooked and no longer pink.
Step 3: To the skillet with the chicken, add the chopped tomatoes, chopped fresh basil leaves, fresh spinach, and chopped garlic. Continue to cook for another 3 to 5 minutes over medium heat until the spinach is slightly wilted and the tomatoes release some of their juices. When done, take the skillet off the heat.
Step 4: To taste, season with extra salt. Put the lid on and keep the skillet off the heat.
Step 5: In the meantime, cook the pasta following the package directions until al dente. Drain when done and toss in the cooked and drained pasta to the chicken and veggies in the skillet.
Step 6: Reheat over low heat, stirring. If desired, add more seasonings. Then, take the skillet off the heat.
Step 7: If desired, you can drizzle the pasta and veggies with more high-quality olive oil (optional). You can even add more olive oil from the sun-dried tomato jar.
