Ingredients:
- 3/4 cup or 175 g softened butter – the creamy foundation
- 3/4 cup or 175 ml coconut milk – the tropical essence
- 1 1/2 cups or 290 g of regular sugar – nature’s sweet symphony
- 3 eggs, lightly beaten – the binding promise
- 4 – 6 Tablespoons desiccated/shredded coconut – the heart of our cake
- 1 3/4 cups or 225 g Plain / All-purpose flour (sieved) – the cake’s structure
- 1 tsp baking powder – our rising agent
- 1/2 tsp salt – the flavor enhancer
Instructions:
To begin your tropical baking adventure, preheat your oven to 180°C (350°F). As it warms, lovingly grease and line your baking tin, preparing it for the magic that’s about to happen.
Begin the batter by whisking together the softened butter and sugar, until it transforms into a pale, creamy mixture, reminiscent of early morning clouds.
Gently introduce the beaten eggs into the mix. Add them slowly, ensuring they meld seamlessly with the butter and sugar. Should the mixture hint at curdling, fear not. A spoonful of your sieved flour will set things right.
It’s time for the star – the coconut milk. Pour half of it into the batter, blending it with the flour. As you mix, the batter will begin to exude the gentle aroma of the tropics.
Add the desiccated/shredded coconut, a nod to our theme. Pour in the remaining coconut milk, followed by the rest of the flour. Blend, but do not overmix. Our aim is a smooth, airy batter.
With love and care, transfer this tropical dream into your prepared baking tin.
Bake this beauty in the preheated oven for 50 – 55 minutes. Patience is key. Resist the urge to peek before 20 minutes have passed.
Once baked to perfection, allow your Coconut Cloud Cake to rest. After a few minutes, gently free it from the tin, placing it on a wire rack to cool.
This cake, though delightful on the day of baking, truly shines the following day. The flavors mature, and the coconut sings louder, making every slice a bite of paradise.
