Juicy and crispy chicken with potatoes, sun-dried tomatoes, spinach, and bacon bits in a delightful creamy Parmesan sauce. This Tuscan Style Chicken and Potatoes is one of the best meals you can make for your loved ones.
2 tablespoons Oil for frying
3 cloves Garlic, minced
6 Chicken Thighs
2 c. Potatoes, red or creamers – cut in small chunks
1.5 c. Heavy cream
1/3 c. Sun-Dried Tomatoes, cut into strips
2 slices Bacon, chopped
2 c. Spinach
1/2 c. Parmesan Cheese, grated
1 tsp Sweet paprika
Parsley for garnish
Salt & pepper to taste
How to make Tuscan Style Chicken and Potatoes
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Add 1 tsp salt to a pot with water. Bring to a boil, then add the cut-up potatoes. Cook for about 15 minutes. Drain when done and set aside.
Step 3: In a cast-iron skillet or other heavy pans, heat the cooking oil. In the meantime, season all sides of the chicken with salt, pepper, and sweet paprika. Once the oil is hot, add the chicken and sear for about 3 to 4 minutes until both sides are browned. Set the chicken aside when done.
Step 4: Discard the oil but 1 tbsp of fat in the skillet. Toss in the garlic and cook for 1 minute. Then, add the heavy cream. Cook for another 5 minutes until the mixture has thickened. Next, add the spinach along with the sun-dried tomatoes. Stir well.
Step 5: Turn the heat off and stir in the Parmesan cheese until melted. As needed, season with salt and pepper to taste.
Step 6: Generously grease a big enough casserole dish (enough to hold 6 chicken thighs and potatoes) using cooking spray. To the casserole dish, add the potatoes. On top, pour the sauce and lay the chicken on top.
Step 7: Place in the preheated oven and bake for about 40 to 45 minutes or until the chicken is completely cooked and the internal temperature of the chicken reaches 165 degrees F.
Step 8: In the meantime, add the bacon to a clean skillet and cook until crispy and golden brown.
Step 9: Take the casserole out of the oven when done. Before serving, sprinkle with bacon and parsley. Enjoy right away!
