Ultimate Instant Pot Beef Barbacoa

Ingredients:

CHIPOTLE SAUCE

3 chipotle peppers in adobo sauce (individual peppers in the can – NOT the whole can)
2 teaspoons adobo sauce (from the can)
3 tablespoons lime juice (fresh is best)
1 tablespoon better than bouillon beef base (optional but recommended)
1/3 c apple cider vinegar
5 cloves garlic roughly chopped
3 teaspoons ground cumin
2 teaspoons oregano (Mexican oregano is amazing if you have it)
1/4 teaspoon ground allspice
1 teaspoon kosher salt
1 teaspoon black pepper
1/2 c beef broth (reduced sodium is best)

BARBACOA

4 pounds beef chuck roast
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
1 yellow onion diced
4 ounces can dice green chiles drained
3 tablespoons tomato paste
1 c beef broth (reduced sodium is preferred)
2 bay leaves
1 lime sliced in half

Directions:

To Make the Chipotle Sauce:

Step 1: In a food processor, add all the ingredients for the chipotle sauce. Pulse until well blended.

To Make the Beef Barbacoa:

Step 1: Remove the excess from the roast, then slice it into 8 cuts.

Step 2: Season the sliced roast with salt and pepper.

Step 3: Press the “Sauté” button on the Instant Pot.

Step 4: Add vegetable oil and allow it to become hot.

Step 5: Add the beef and cook each side for about a minute or until brown.

Step 6: Transfer the seared beef onto a clean plate.

Step 7: Add the onion into the pot and sauté for 2 minutes or until translucent.

Step 8: Add 1 cup of broth and scrape the bottom to deglaze.

Step 9: Add the green chiles, bay leaves, and tomato paste.

Step 10: Put the seared beef back to the pot as well as the chipotle sauce.

Step 11: Put the sliced lime on top.

Step 12: Seal the pot and cook for 1 hour.

Step 13: Do a quick release and open the lid. Discard the bay leaf.

Step 14: Transfer the beef into a large mixing bowl. Use two forks to shred them into small pieces.

Step 15: Add the sauce into the bowl.

Step 16: Serve and enjoy!

Note:

If you want a thick sauce, add dissolved cornstarch. Stir until well mixed and thick.
