Ingredients:
1/2 tablespoon oil
1 onion diced
3 garlic cloves minced
One small can of mushrooms sliced
1/2 tablespoon soy sauce (gluten-free if needed)
3.5 ounces (100 g) fresh spinach
1 1/2 c (360 g) marinara sauce notes)
6-8 lasagna noodles (regular or gluten-free)
1 2/3 c (400 g) hummus
1/2 teaspoon cumin (optional)
1/2 teaspoon paprika (optional)
A few tablespoons of lemon juice (optional)
Salt and black pepper to taste
7 ounces (200 g) vegan cheese
Directions:
1. Place a large pot with salted water on the stove, then turn the heat to high and allow it to boil.
2. Add the lasagna noodles and cook until firm to bite. Drain and rinse with cold water to stop the cooking process.
3. In a 9×6-inch baking dish, spread 1/2 cup of marinara sauce on the bottom.
4. Place a pan on the stove and turn the heat to medium.
5. Add oil and allow it to become hot.
6. Add the garlic, mushrooms, and onion. Sauté for 4 minutes or until aromatic and translucent.
7. Add spinach and soy sauce. Cook for about a minute. Turn off the stove.
8. In the same pan, add the hummus. Stir until just mixed.
9. Add seasonings if needed.
10. Prepared the oven and preheat to 180 degrees C or 360 degrees F.
11. Fill each lasagna noodle with the hummus mixture. Roll and arrange them onto the prepared baking dish.
12. Spread about 1 cup of marinara sauce on top of the roll-ups.
13. Add the vegan cheese over the marinara sauce.
14. Place it inside the preheated oven and bake for 20 or until done.
15. Remove from the oven.
16. Garnish the Vegan Lasagna Roll-ups with Vegan Parmesan Cheese.
17. Serve and enjoy!
