If you crave meatloaf, but you want it to be a healthy one, then this recipe is for you! This Vegan Meatloaf will take you to flavor town! Packed with incredible flavors, this is surely a must-try! Serve it with some roasted veggies, and you have yourself a meal to remember. Enjoy!
Ingredients:
1 cup finely chopped baby Bella mushrooms
1 medium carrot, peeled and finely chopped
2 (15 ounces) cans chickpeas, drained and rinsed
1 tablespoon vegan Worcestershire sauce
2 stalks of celery, finely chopped
1/4 cup ketchup
1 tablespoon extra-virgin olive oil
1/2 yellow onion, finely chopped
1 cup panko bread crumbs
Kosher salt
Freshly ground black pepper
2 tablespoons low-sodium soy sauce
1/4 cup barbecue sauce
1/2 teaspoon smoked paprika
1/4 cup freshly chopped parsley, plus more for garnish
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Line parchment paper onto a 5×8-inch loaf pan.
Place a large skillet on the stove and turn the heat to medium. Add oil and allow it to become hot.
Add the carrot, mushrooms, onion, and celery. Sauté for a few minutes or until soft. This usually takes about 6 to 8 minutes.
Add the chickpeas into a food processor, then pulse a few times until it forms into a paste. Transfer it into a mixing bowl.
Add soy sauce, sauteed veggies, breadcrumbs, parsley, and Worcestershire sauce into the bowl with the processed chickpeas.
Stir everything until well blended.
In a separate mixing bowl, add BBQ sauce and ketchup. Stir until well blended.
Add 1/2 of the BBQ sauce together with salt, pepper, and paprika mixture into the bowl with the chickpea mixture. Stir everything until well blended.
Pour the mixture into the prepared loaf pan and spread it evenly.
Spread the rest of the BBQ mixture over the meatloaf.
Place it in the preheated oven and bake for about 30 minutes.
Brush with more BBQ mixture on top and spread it evenly.
Remove the meatloaf from the oven and allow it to rest for a few minutes at room temperature.
Sprinkle freshly chopped parsley on top to garnish.
