I love this easy recipe. It’s crazy simple and mouthwatering! The veggies are baked in cream and cheese. Also, the garlic adds depth to this already amazing side dish. This dish will make you love summer squash!
We can already feel the heat of summer! And nothing beats a delicious summer dish loaded with tons of fresh zucchini and yellow squash. And this comes together in minutes! Bonus, both squashes are a wonderful source of nutrients that our bodies need!
INGREDIENTS
2 large cloves garlic, minced
2 tbsp butter
1/2 onion, thinly sliced
1 small yellow squash, sliced in rounds 1/8 to 1/4 inch thick
1 small zucchini, sliced in rounds 1/8 to 1/4 inch thick
1 c. shredded smoked Gouda
1/2 c. heavy cream
1/4 c. grated Parmesan
HOW TO MAKE ZUCCHINI AND YELLOW SQUASH AU GRATIN
Step 1: Prepare the oven. Preheat it to 450 degrees.
Step 2: In an oven-proof skillet, melt the butter on medium heat. Once the butter has melted, add the onion and cook for about 5 minutes until the edges begin to brown. Toss in the garlic and continue to cook for a minute more.
Step 3: Pour in the cream and let it simmer until bubbly and beginning to thicken.
Step 4: Gradually whisk in the Parmesan, then add the zucchini and yellow squash. Cook for additional 4 to 5 minutes.
Step 5: On top, sprinkle the smoked Gouda. Place in the preheated oven and bake for about 15 to 20 minutes or until the cheese is golden brown.
NOTE:
I used smaller zucchini. If using bigger zucchini, double the cream and Parmesan. Also, keep in mind that they require extra simmering and/or baking time.
