Ingredients:
1 large Egg
2 tbsp avocado oil
2 large zucchinis grated
½ c grated parmesan cheese
¼ tsp garlic powder
½ c all-purpose flour
¼ tsp onion powder
1 tsp salt
¼ tsp black pepper
Labneh Dip
2 tbsp chopped cilantro
1/4 c labneh
1/4 tsp garlic powder
1 tbsp lime juice
Directions:
1. Put the grated zucchini into kitchen towels, then sprinkle salt over. Let it sit at room temperature for at least 10 minutes.
2. Fold the towel, then squeeze to remove most of the water.
3. Move the squeezed zucchini into a mixing bowl.
4. Add flour, egg, garlic powder, cheese, pepper, and onion powder over the zucchini. Stir everything until well mixed.
5. Place a large skillet on the stove and turn the heat to medium.
6. Add avocado oil and allow it to become hot.
7. Spoon the zucchini mixture, then drop each into the hot skillet. Press each gently to flatten them out.
8. Cook the fritters for 3 minutes on each side or until they turn golden brown. Remove from the skillet onto a clean plate lined with paper towels to drain any excess oil. Repeat the process with the rest of the fritters.
9. Serve with your preferred dipping sauce. Enjoy!
Notes:
I love serving these fritters with sour cream, Greek yoghurt, or labneh dip.
Place any leftovers in an airtight container, then put them inside the fridge. They can last up to 5 days.
